
12 June 2025, Dubai, United Arab Emirates – Jamavar Dubai unveils Spice & Spirits: a bold new four-course tasting menu where every dish is matched with a cocktail that does more than just complement. Designed to surprise the palate and reimagine the rules of pairing, each creation walks the line between heritage and innovation, think charcoal-grilled prawns with apricot-laced Palomas or creamy butter chicken lifted by a tropical daiquiri. Available from June 19 onwards at AED 395, guests can choose between a vegetarian or non-vegetarian four course menu, both rooted in India’s rich culinary traditions and brought to life through cocktails that twist, tingle, and balance at every turn.
Less than a year since opening, Jamavar Dubai has already been awarded One MICHELIN star in the 2025 MICHELIN Guide Ceremony – a recognition that speaks to the restaurant’s refined expression of Indian culinary heritage. Rooted in time-honoured recipes reimagined with contemporary finesse, the Spice & Spirits menu begins with the Chandni Chowk Ki Aloo Tikki, a golden, crispy potato patty layered with the warmth of cumin, coriander, and a hint of green chilli, served atop a smear of spiced yoghurt and tamarind chutney. The dish evokes the bustling street corners of Old Delhi with its mix of crunch, spice, and tang. It’s paired with the Buzzy Tonic, a refreshing blend of ginger, tonic, and citrus, with its crisp fizz cutting through the richness of the tikki, while the ginger mirrors the spice and the citrus lifts each bite.



The second course offers a choice between the Ajwaini Paneer Tikka or Tandoori Prawns, both marinated in a blend of warming spices and grilled over charcoal for a deep smoky finish. The paneer is served with a coriander and peanut chutney, while the prawns are paired with a cooling mint chutney. These are complemented by the Khubani Paloma, where the tartness of apricot and citrus beautifully offsets the smokiness of the grill, enhancing the layered spice profiles.
For the main course, guests may choose between the comforting richness of Old Delhi Butter Chicken, a Jamavar signature, featuring chargrilled chicken simmered in a velvety tomato and fenugreek gravy – or the Kofta Lazeez, delicately spiced vegetable dumplings served in a creamy, cashew-based sauce. Both dishes are served alongside Dal Maharani, Bhindi Singhara, Pulao Rice, and a Mixed Bread Basket. This course is paired with the Coorg Daiquiri, a tropical and herbaceous cocktail layered with notes of coconut, kaffir lime, and curry leaf. Its cooling character cuts through the creaminess of the gravies, while its herbaceous finish mirrors the warmth of the dishes, adding depth without overpowering.



The meal concludes with the Chocolate Bounty, a decadent blend of Valrhona chocolate and coconut, served with a scoop of fragrant cardamom ice cream. Rich, spiced, and layered, the dessert finds its perfect match in the Nocturne Espresso Martini, which is finished with a delicate saffron mist. The bold coffee notes echo the intensity of the chocolate, while the saffron and cardamom create a warm, aromatic bridge – bringing the Spice & Spirits experience to a deeply satisfying close.
Served daily, Spice & Spirits brings together the creative forces of Culinary Director Surender Mohan and Beverage Manager Jeet Verma in a menu that honours tradition while embracing innovation. Drawing from age-old Indian recipes and regional techniques, each dish stays true to its roots – yet is reinterpreted through inventive cocktail pairings that bring unexpected depth, contrast, and refinement.
